A quick recipe for pumpkin spice banana bread I created last week with a bit of experimenting, I even surprised myself it was SO GOOOOOD.
Ingredients
3 very ripe bananas
1/3 cup butter melted (or soften in microwave for a couple secs)
1 dash of salt
1/2 teaspoon baking soda
3/4 cup sugar (I used raw organic)
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon of english toffee extract
2 teaspoons of pumpkin spice season
1 teaspoon of cinnamon
1 1/2 cups all-purpose flour
1/4 cup of dried cranberries (chocolate nibs would be amazing too)
Glaze
1/4 cup of brown sugar
1 tbsp. melted butter
To Make It
1. Preheat the oven to 350°F:
2. Put parchment paper down or butter a loaf pan.
3. Mash the bananas and add the butter in a mixer (or hand mix works)
4. Mix in the remaining ingredients (note: not brown sugar that's for the glaze)
5. Bake for 45 mns, check with a knife making sure it comes out clean, pop back in if it's still wet. The last 5 mins pour butter and brown sugar mix over top and spread across. Bake.
6. Once done, let cool before cutting.
